The extraordinary pyramids of Teotihuacan built between 50BC and 50AD (although exact dates seem to be disputed) - that’s way before the Aztecs. It was apparently the biggest city in the western hemisphere until the 1400s. Incredible.

So very easy to eat brilliant plant-based meals these days. Three wonderfully inventive starters from @restauranterosetta - tomatillo with nopales, piloncillo and ocosingo cheese (no, I don’t know what all those ingredients are either), a lovely fresh fennel and citrus salad and Savoy cabbage tacos with pistachio pepián and romaritos. Who needs meat?
